This easy teriyaki chicken is formed with boneless skinless pigeon breast within the slow cooker and can last you a whole week of lunches or dinners. the simplest part? You just about just place your chicken and sauce into the Crock Pot and let her cook until it’s time to thicken the sauce and shred the chicken!


CAN YOU PUT FROZEN CHICKEN during a CROCK POT?

The short answer here is not any , we don't recommend putting frozen chicken during a Crock Pot . we are saying this only because we don’t want you to urge sick with foodborne illness and sometimes this will happen if your chicken sits partially frozen for too long.

WHAT IS TERIYAKI SAUCE MADE OF?

Good news for you, we came up with our very own chicken teriyaki sauce on Fit Foodie Finds that’s refined sugar-free and simply made gluten-free! Here are the ingredients you’ll need:


  • soy sauce or tamari (for gluten-free option)
  • maple syrup
  • minced garlic
  • fresh ginger



HOW am i able to THICKEN MY TERIYAKI SAUCE?

There are a couple of ways to thicken your teriyaki sauce –> slow cooker and stove-top. to try to to this, you'll need either cornstarch or tapioca starch.

Slow cooker: Remove everything but the sauce from your slow cooker and switch to high. Add 1-2 tablespoons of cornstarch and whisk until dissolved. Cover the slow cooker and let sit for around 15-20 minutes until thickened.

Stove-top: Bring your sauce to a overboil high heat and add 1-2 tablespoons of cornstarch. Whisk to dissolve then turn the warmth right down to low. Let simmer for around 3-5 minutes until thickened.

CROCK POT TERIYAKI CHICKEN

INGREDIENTS

CROCK POT TERIYAKI CHICKEN

  • 1.5 lb. boneless, skinless pigeon breast 
  • 1 cup Homemade Teriyaki Sauce
  • 2 tablespoons cornstarch.



VEGETABLES

  • 1 large red bell pepper, chopped
  • 2 cups snow peas
  • 3 cups broccoli, chopped
  • 1/2 Pieris rapae onion
  • 2 teaspoons minced garlic
  • 2 tablespoons vegetable oil 
  • 2 teaspoons benniseed oil
  • salt and pepper, to taste



WHITE RICE

  • 1 cup long grain polished rice.
  • 1 1/2 cups water.



INSTRUCTIONS

CROCKPOT TERIYAKI CHICKEN


  1. Place chicken breasts into a slow cooker and add homemade teriyaki sauce on top (hold off on the corn starch).
  2. Cover slow cooker and cook on high for about 2-3 hours or on low or 4-6 hours.
  3. Once the chicken is fully cooked, remove chicken from the slow cooker (leaving the liquid within the slow cooker) and place onto a plate. Shred chicken with two forks and put aside 
  4. Turn your slow cooker to high then sprinkle the corn starch into the sauce and whisk the sauce until the corn starch has dissolved.
  5. Cover the slow cooker and let the sauce simmer on high within the slow cooker for about 10 minutes or until it thickens.*
  6. Add shredded chicken back to the slow cooker and blend until everything is coated.



VEGETABLES


  1. While chicken is cooking prepare vegetables by preheating the oven to 375ºF.
  2. Place all vegetables onto a baking sheet and drizzle with vegetable oil and benniseed oil and toss. Then, season with salt and pepper.
  3. Next, place the baking sheet within the oven and bake for 10-15 minutes.



WHITE RICE


  1. Add water and rice to a medium-sized saucepan and convey to a overboil high heat.
  2. Turn heat to low, cover, and let simmer until all the water has evaporated and rice is light and fluffy (about 15-20 minutes).
  3. Remove from heat.



CHICKEN TERIYAKI BOWL

Evenly distribute chicken, vegetables, and rice into 4-6 bowls and serve immediately or into meal prep containers for the week.


NOTES

#Be sure that the sauce within the slow cooker is hot before adding the cornstarch to the sauce. you would like the sauce to be hot for the cornstarch to try to to its job. If the sauce isn't hot, pour the sauce into alittle saucepan, bring back a boil and add the cornstarch. Slowly whisk cornstarch into the sauce and let thicken. Pour sauce back to the slow cooker.
